Kimchi Grilled Cheese

A quick and easy combo of melted cheese, crunchy kimchi, scallions and toasty bread. There are many perks to mayo-ing your bread before it hits the hot pan — mayo doesn’t burn as fast as butter, it feels less greasy, it browns beautifully… the list goes on.

Makes 1 sandwich
10 minutes


PARTS
— 2 slices bread
— 1 tbsp mayonnaise
— A big handful of freshly grated mozzarella
— A small handful of kimchi, roughly chopped
— 1 scallion, thinly sliced


CLUES
1. Heat a large non-stick pan over medium-low heat.
2. While pan heats, spread mayo over 1 side of each slide of bread.
3. Place bread mayo side down in warm pan. Top each slice with cheese, then kimchi and scallions, dividing evenly. Season with salt and pepper over top. Cook until cheese starts to melt, about 5 minutes. Watch the heat level to make sure your bread is getting golden and not burning.
4. Use a spatula to quickly close the sandwich, gently pressing them together. Continue to cook until cheese is fully melted. Dig in!
